Zero waste: our kitchen practices
Composting, water reuse, and why we’ve sent zero organic waste to landfill for five seasons.
Pitahaya peels are dried for tea. Press pulp is composted and returned to Oaxaca. Water from cooking legumes is filtered to water the back garden.
Nothing gets thrown out because nothing is leftover. It’s ingredient accounting: every gram enters a second life before leaving.
